Venture down to the Lower Lobby of the Fairmont Hotel Vancouver, past the watch repair shop (if you’re coming from the main entrance), and you’ll stumble across a hidden holiday pop-up that is guaranteed to impress whoever you take with you.
The pop-up, Kringle’s, is your stop destination for festive bites and sips set against Instagram-worthy backdrops.
On the menu, you can find tasty cocktails like the Yuletide Rose Fizz (Empress Elderflower gin, apple cider, winter syrup, lemon, egg white), Holiday Smores (Northern Keep vodka, Baileys, crème de cacao, caramel toffee, cream) and Frosted Margarita (Tres Generaciones Blanco tequila, Cointreau, lime, coconut syrup, cream, rosemary).

As for food, there are plenty of shareable plates that will definitely be a crowd-pleaser, like the Frito Misto, which consists of deep-fried crispy calamari and prawns with tartare sauce and scallions.
Other must-orders include the crab and lobster rolls (served on toasted brioche with lemon dill aioli), the beef carpaccio (with compressed apple, salt-cured egg yolk, toasted hazelnuts, and brioche croutons), and the OMG chocolate cake that, which, as the name suggests, will have you saying, “Oh my god.”

Aside from the food and drink, the decor is reason enough to visit. There are three distinct rooms, including one with a fireplace and another with ornaments hanging from the ceiling.
